Raised in a good old fashion diner founded by grandparents who came to America from Greece in 1939, Chris Skodras learned the restaurant business firsthand from his grandfather and father. From the age of six, Chris spent many hours in the restaurant being mentored by family. The restaurant was the center of his life.

As a child, he swept the parking lot and washed dishes for dimes to play the pinball machine, and by the age of 15, he was the short order grill cook. Chris learned the value of hard work and family traditions, and he applied his vast knowledge to open the first Eggs Up Grill with his wife Pat in 1987.

They were determined to do things their way and knew it was possible to build a thriving breakfast and lunch business while living a slower-paced life and spending plenty of time with their family and friends. Their new establishment stayed open no more than 8 hours a day.

Over time, they found their ingredients for family restaurant success included a simple menu, quality food, signature items, and an atmosphere of friendship and community. And they didn't have to spend 18 or 20 hours every day to be successful.

During a visit to Pawleys Island, South Carolina, to visit family, Chris and Pat fell in love with the climate, the people, and the Lowcountry lifestyle. Knowing their breakfast and lunch restaurant concept would work well here, they decided to move south and open Eggs Up Grill, which they still own and operate today.

Eggs Up Grill remains a rarity among franchise restaurants: the founders continue to operate the first restaurant, and true to form, Chris is constantly hands-on by testing and improving the menu, systems, and processes for their franchisees and customers.
